Re:touchscreen for the raspberry pi, I find that the official one(~7") is
ideal sized screen wjere you can sre the text without squinting and utilize
the dedicated dsi port instead of using up gpio pins.
Seeedstudio also makes smaller screens (you can also find them at
MicroCenter in small quantities) which uses up some of the gpio pins.
